Bacon and cheese scones

Ingredients

  • 4 unsmoked bacon rashers, finely diced
  • 100g mature Cheddar cheese, grated
  • 50g Parmesan cheese, grated
  • 450g self-raising flour
  • 150g unsalted butter, cut into small cubes
  • a pinch of salt
  • ½ tsp Cayenne pepper
  • a small bunch of chives
  • 1 small egg, beaten
  • 100ml milk or buttermilk

Method

Savory bacon and cheese scones with chives and a hint of spice. Perfect for breakfast or tea. This recipe makes approximately 12 scones.



  1. Preheat the oven to 220ºC / 200ºC fan / Gas 7.
  2. Fry the bacon until brown and crispy, then place on kitchen paper to drain any excess fat.
  3. Sift the flour into a mixing bowl, then add the butter and salt.
  4. Rub the butter into the flour with your fingertips.
  5. Add the cheeses (keep a little to sprinkle on the surface), chives and Cayenne pepper powder.
  6. Make hole in the middle of the mixture and add the beaten egg and a little of the milk. Use a knife to turn the mixture and bring it together as a dough. Use more milk if necessary.
  7. Sprinkle a little flour onto the table top and roll the mixture to about 4cm thick. Use a circular cookie cutter to cut out the scones, then place these on a greased baking tray.
  8. Brush the scones with a little milk and sprinkle the rest of the cheese on the surface.
  9. Bake in the oven for about 15-20 minutes.
