Spiced pork koftas with jewelled couscous

Ingredients

  • 450g lean pork mince
  • 1 tbsp Ras el Hanout spice mix
  • 1 garlic clove, crushed
  • 50g dates, chopped
  • 25g pistachio nuts, chopped
  • 2 spring onions, finely sliced
  • bamboo skewers, soaked in cold water

For the ‘jewelled’ couscous:

  • 100g couscous
  • 1 tbsp Ras el Hanout spice mix
  • ¼ cucumber, cubed
  • 2 spring onions, sliced
  • 20 blueberries
  • 2 tbsp pomegranate seeds
  • 2 tbsp fresh mint, chopped
  • 2 tbsp fresh parsley, chopped
  • olive oil for drizzling

Method

Enjoy spiced pork koftas with jewelled couscous, a flavourful and quick dish. Mix pork mince, spice, garlic, dates, nuts and grill.



  1. Mix the pork mince, spice, garlic, dates, nuts, spring onions and seasoning in a large bowl.
  2. Divide the mixture into about eight and shape into sausages. Thread the sausages onto soaked bamboo skewers, lightly squashing around the skewer to secure.
  3. Place the skewers on a plate, cover and leave in the fridge for 15-20 minutes to chill.
  4. Remove from the fridge and place the skewers under a preheated grill; cook for about 12 minutes until they are golden and cooked through.
  5. To make the ‘jewelled’ couscous, place the couscous and spice into a large bowl and cover with approximately 200ml of boiling water – cover and leave for about 5 minutes until the liquid has been absorbed. Add all the remaining ingredients and combine together well. Season, drizzle with a little oil and serve with the koftas.
