Piquant pork casserole

Ingredients

  • 450g lean pork shoulder or leg, diced
  • 1 medium leek, sliced
  • 2 celery sticks, sliced
  • 1 garlic clove, crushed
  • 1 tbsp tomato purée
  • 1 tbsp Worcestershire sauce
  • 300ml orange juice
  • 1 tbsp paprika
  • 1 tbsp English mustard

Method

Piquant pork casserole: a simple and savory dish with pork, tomatoes, olives, and herbs, cooked in the oven and served with mash and veggies.



  1. Preheat the oven to 160ºC / 140ºC fan / Gas 3.
  2. Place all the ingredients into an ovenproof casserole dish.
  3. Mix well, cover and cook in the oven for 1½-2 hours until tender.
  4. Serve with mashed swede, potato and carrot and a mixture of seasonal vegetables.
