Thai pork bites by Food: a fact of life

Ingredients

  • 450g pork mince
  • 4 spring onions, diced
  • 2 garlic cloves, crushed
  • 1 tbsp of fresh coriander, chopped
  • 1 lime, juice and zest
  • 5cm fresh ginger, finely diced

For the dipping sauce:

  • 1 tbsp soy sauce
  • 1 tbsp sweet chilli sauce
  • 1 tsp honey

You can enjoy these bites by themselves as part of a party platter or snack, or make them into a main meal by serving with noodles and stir-fried vegetables or by adding new potatoes, baby corn, sugar snap peas and tenderstem broccoli.



  1. Preheat the oven to 180°C / 160°C fan / Gas 4.
  2. Place the pork mince in a large mixing bowl.
  3. Prepare the ingredients: remove the root and slice the spring onion into circles; crush the garlic; chop the coriander; zest the lime; cut the lime in half and juice.
  4. Add all the prepared ingredients to the bowl with the pork mince and stir well.
  5. Divide the meat mixture into 12 equal balls. Flatten slightly and place them on a baking tray.
  6. Bake in the oven for 20 minutes.
  7. Make the dipping sauce: pour the soy sauce into a small mixing bowl, add the honey and sweet chilli sauce then stir well.
  8. Serve the bites on their own with the dipping sauce as a light snack, or make them into a main meal by serving with noodles and stir-fried vegetables or adding new potatoes, baby corn, sugar snap peas and tenderstem broccoli.
  9. If you’ve enjoyed these, next time try experimenting by adding some grated apple or chopped pineapple for extra texture and a fruity flavour. Or instead of ginger and lime juice, why not try cinnamon and orange juice?
