- Place the pork in a bowl with the chilli paste and garlic and stir well. Leave to marinate for 30 minutes.
- Heat the pan or casserole dish and add the oil, then fry the coated pork for a few minutes, add the onion and fry or a further 5 minutes.
- Add the stock and simmer for 10 minutes.
- Add the potatoes and carrot and simmer for 20 minutes.
- Add the soy sauce and kimchi and simmer for a further 20 minutes, adding more water if necessary.
- Check to ensure the meat is tender. If so, add the spring onions and stir.
- Serve with steamed rice, coriander and sliced chilli.

- 450g Diced porc shoulder or leg
- 2 tbsp oil
- 2 tbsp chilli paste
- 3 cloves garlic, crushed
- 2 onions, roughly chopped
- 1 large carrot, sliced
- 450g baby potatoes, halved
- 500 ml chicken stock
- 250g Kimchi
- 2 tbsp low salt soy sauce
- Bunch spring onions, chopped

- Coriander and sliced red chilli (optional)
