- 1 hour before cooking, remove the pork joint from the fridge and dry the joint with kitchen paper.
- Score the surface with a sharp knife (or ask you butcher to do this for you).
- When ready to cook, heat up the airfryer to 200-210’C
- Rub the surface with the oil and salt.
- Place in the airfryer on 200- 210’C setting for 20 minutes to get a crispy crackling.
- Reduce the temperature to 160’C for a further 40-50 minutes per kilo.
- Airfryers can vary therefore check that the internal temperature is 70’C (the core temperature will rise upon resting).
- When ready turn off the airfryer, open slightly and leave the meat in to rest for 15-20 minutes before carving.
- If the cracking isn’t crisp enough you can remove the skin and place it in the airfryer on 210-220 for 10-15 minutes.
