Cooking is what I love to do and when you have such a great ingredient as local porc from Wales, it’s a joy to use, and share with friends and family.
As many of you know, I’m all about the fire when it comes to cooking and BBQ is up there with my favourite ways to cook meat. In my opinion, you just can’t beat a bit of outdoor cooking with tasty Welsh ingredients, sourced locally.
My advice is that BBQ cooking with porc isn’t all about sausages! Don’t be afraid to be original and mix it up – thick, juicy marinated porc chops taste absolutely fantastic over the coals or flames, especially when the thick layer of fat round the outside starts to crisp and caramelise. You can even make pulled porc on a barbie using a pot – the succulent meat just falls away after a few hours.
If BBQ isn’t your thing then you can’t beat a delicious ham joint, which is so homely and always reminds me of my Nain’s cooking.
So, get on first name terms with your butcher or porc producer and find out for yourself why locally reared porc from Wales is up there with the best you can get.
