Pork, ginger and spring onion stir-fry

Ingredients

  • 225g lean pork loin, cut into thin strips (alternatively, use leg steak or fillet)
  • 1 tbsp oil
  • 2cm piece of root ginger, peeled and finely sliced
  • 1 garlic clove, crushed
  • 6 spring onions, trimmed and sliced
  • 50g baby sweetcorn
  • 50g green beans, trimmed and sliced
  • 227g can of pineapple chunks, drained
  • 4 tbsp oyster sauce

Method

Delicious sautéed pork stir-fry with garlic, ginger, spring onions, sweetcorn, green beans, pineapple and a drizzle of oyster sauce.



  1. In a large pan, heat the oil and cook the porc strips for 3-4 minutes until browned.
  2. Add the garlic, ginger, spring onions, baby sweetcorn, green beans, and pineapple. Cook for a further 1-2 minutes.
  3. Add the oyster sauce and cook for a minute until heated through.
  4. Serve the stir-fry with noodles or rice, extra stir-fried vegetables if desired and prawn crackers.
