Pork Sausage and Chorizo Casserole

Ingredients

  • Oil
  • 8 sausages
  • 2 Onions, roughly chopped
  • 1 red pepper, diced
  • 1 yellow pepper, diced
  • 125g piece chorizo sausage, sliced
  • 2 cloves garlic, crushed
  • 1 tbsp sweet smoked paprika
  • 1 tbsp dried thyme
  • 1 can chopped tomatoes
  • 1 tbsp tomato puree
  • 150 ml chicken stock
  • 1 drained can or pouch cooked lentils
  • Chopped chives to garnish

Method

A hearty and warming pork sausage and chorizo casserole – perfect for a cold winter’s evening. Serve with creamy mashed potato and warm, crusty bread for the ultimate indulgence.



  1. In a large pan or casserole dish heat the oil, add the onions and peppers and cook for a few minutes to colour slightly.
  2. Move the vegetables to the side and add the sausages and cook for a few minutes until golden brown. Remove and cut into chunks (optional) and return to the pan.
  3. Add the chorizo and garlic and stir for a few minutes.
  4. Add the thyme, paprika, tomatoes, puree and stock and stir well.
  5. Cover and cook for 25 minutes.
  6. Add the lentils, stir and cook for further 5 minutes or until piping hot.
  7. Sprinkle with chives.
  8. Delicious served with mashed potato, pasta or chunky bread.
