- In a large pan or casserole dish heat the oil, add the onions and peppers and cook for a few minutes to colour slightly.
- Move the vegetables to the side and add the sausages and cook for a few minutes until golden brown. Remove and cut into chunks (optional) and return to the pan.
- Add the chorizo and garlic and stir for a few minutes.
- Add the thyme, paprika, tomatoes, puree and stock and stir well.
- Cover and cook for 25 minutes.
- Add the lentils, stir and cook for further 5 minutes or until piping hot.
- Sprinkle with chives.
- Delicious served with mashed potato, pasta or chunky bread.

- 150 ml chicken stock
- 1 drained can or pouch cooked lentils
- Chopped chives to garnish
