5 recipes to help you make the most of May’s bank holidays

#

May: the month of bank holdiays! Make the most of yours with these five summer’s-coming-early recipes.

With the weather on the turn, we can certainly get away with a bit of al-fresco dining to put us in the mood for summer.

Many of us are treated to long weekends coming up at the start and end of the month, so May really is the perfect time to relax, get in the summer spirit and re-acquaint yourself with your garden or balcony if you’re lucky enough to have one.

If you don’t have any outdoors space, throw those windows open for a real blast of fresh air – couple that with a spot of imagination and a cloth draped over your table or floor for a chilled picnic in the park feel.

1. Mini Porc, Sage, Apple and Cider Pies

These cute little porc pies have got summer picnic written all over them.

2. Porc Medallions with Coconut Rum Sauce and Lotus Root Crisps by The Rare Welsh Bit

Pretend you’re on a tropical beach and get swept away with these Caribbean flavours.

3. Porc Tagine with Apricots, Sultanas and Orange

The richness of this Moroccan inspired tagine will warm you up, even if it’s a wee bit chilly!

4. Porc, Black Bean and Orange Salad
